Banana Pancakes and Cheater Maple Syrup

This recipe is from Whole Food for the Whole Family, a La Leche League cookbook.

2 C buttermilk
2-3 eggs
1 tsp baking soda
1/2 tsp salt
3-4 very ripe bananas
2 C whole wheat flour

Combine everything in blender, one ingredient at at time, and whir till smooth.

Since good maple syrup is so expensive, since last summer when we started ‘tightening the ol’ belt’ as Mom would say, we have been making our syrup. All it is is a simple syrup with Maple flavoring in it. The recipe calls for all white sugar, but I throw in some brown for flavoring and color.

    Devin,
    I use milk, but I’m thinking of trying buttermilk. I also use 1 cup oat flour and 1 cup WW. It has a nice texture. I have found that all WW is wayyy to dry & hearty. Maybe with buttermilk, it’s not so?
