Xmas 2009-Early Jan 2010 002

Banana Pancakes

3 ripe bananas

3 eggs

1 C milk

1.5 T brown sugar

2 t vanilla

1 t lemon juice

2 t baking powder

.5 t salt

2 C flour (I used half Whole Wheat and half Oat)

In a large bowl mash the bananas, then beat in the eggs.  Add the milk, brown sugar, vanilla, and lemon juice.  In a smaller bowl, mix the dry ingredients.  Add the dry to the wet and stir to combine – don’t over mix.  Drop batter onto a heated, greased skillet.  Flip when small bubbles appear and remove when they stop steaming.

I like to serve these with:

Berry Sauce

3 C frozen berries

1/4 C water

2 T cornstarch powder (mixed in an extra couple teaspoons of water)

2 T honey (or to taste)

Heat the berries and water over medium-medium high heat. Once the berries are defrosted and simmering, stir in the cornstarch mixed with water.  Turn the heat down, stir in the honey and let the sauce thicken.

    Oh gosh, I’d love to open a restaurant….but I foresee a few problems…1. I’m not THAT great of a cook, 2. it takes a TON of time and money…

    we’ll see. 😛

    And thank you, I’m glad that if I ever do open an eatery I’d have one dedicated customer. Haha.
